Morning Glory Carrot Muffins

When I was a kid and someone brought out a carrot cake at a birthday party or celebration, I would seriously mope. No offense if carrot cake is your favorite…but who wants vegetable-flavored cake? Not even cream cheese frosting can redeem that.

Cake should be rich and sweet with a light but even crumb. There should be no carrots.

But I read recently that carrots are the only vegetable in season where I live during the month of October. So I made you some morning glory muffins—which, of course, is what we call carrot cake when we eat it for breakfast, which we should all agree is a much better time to eat “cake” made of carrots!

I love the idea of a healthy muffin, and these muffins really are pretty glorious: they have no refined sugar, they use whole grain flour, and they are full of shredded fresh carrots and apples, as well as coconut and pecans!

My son begs for these muffins, and I love to indulge him! Hiding a vegetable in plain sight while my son scarfs it down? Yes please.

And he is 3 years old!

It's My Birthday!This year for Jake’s birthday, I really wanted to keep it simple. I wanted to spend less time worrying and preparing, and more time marveling at how my tiny baby turned into this enormous, articulate preschooler, a little boy with a strong will and a contagious smile!

Jake never hesitates when you ask him what his favorite foods are: ice cream and pizza. (Clearly I have been teaching him everything I know…) So this year we decided to have an ice cream party to celebrate what an awesome kid Jake is!

Toasted Marshmallow Rice Krispie Treats

You really shouldn’t be surprised by what I’m about to tell you.

After all, I have a long, illustrious history as a picky eater. I know it’s mind-boggling that a person could hate fruit and all fruit-flavored things, donuts, fried stuff in general, tea, the flavor of honey and maple syrup, but it’s all true. Plus, the real reason I became a vegetarian (you know…aside from hoping to become healthier) is just that I don’t like meat.

So you really shouldn’t be surprised:

I have never liked Rice Krispie treats.

When I went off to college and discovered that not all Rice Krispie treats were Scotch Krispies, I simply avoided them in the dessert line. While all my friends would stampede toward the sweets on a day that Rice Krispie treats were available, I would meander around and grab an extra bagel (please and thank you, freshman 15…).

It should also not surprise you, then, to learn that I have never made Rice Krispie treats before.

But last week my husband drove off with our grocery cart and came back with two bags of marshmallows, a box of Rice Krispies, and a glint in his eye.

And do you know what? When I was trying to decide how to make peace with the Rice Krispies and marshmallows, I found a recipe that used brown butter and toasted marshmallows (um, nom!). At first I felt a little mean, deviating from the standard. I knew what Dave really wanted.

But these treats are really good! Still classic, with that stretchy, crunchy, almost-too-sweet marshmallow flavor, but also caramel, a rich hint of toasty brown that…might…actually…make me reverse my anti-Krispie stance.

Prosecco-Poached Salmon

Do you know what the definition of craziness is? It’s when you do the same thing over and over again, expecting a different result.

Let’s be honest: I have a preschooler and a baby, so my behavior may often seem quite insane, if you are watching.

But this amazing salmon marks an end to one particular crazy thing I’ve been doing for years! You see, for years I have been trying to make this perfect salmon poached in apple cider. It sounds amazing, right? Perfect for Fall! But it’s so sweet. It’s genuinely weird. And yet every year as the leaves start collecting on the ground I whip out the same recipe and take another whack at it.

Crazy.

But this month, as I was making plans to go buy some cider from my local pumpkin farm and hop on my regularly scheduled crazy train, I happened to find a recipe that made me breath a huge sigh of relief. Because prosecco!

It just sounds romantic, doesn’t it? Poaching salmon in a fizzy broth of sparkling wine and shallots! And let me tell you, it was absolutely perfect! Everything I’ve always dreamed poached salmon could be.

Millet Vegetable Stir Fry

Mind, prepare to be blown:

Stir Friday.

Yes…it’s the solution to my weekly pleadings with my family to name something other than pizza (Jake) or meatloaf (Dave) when I ask what to cook for dinner. Stir Friday.

I love it for so many reasons: 1) it still allows room for creativity, because “stir-fry” is a huge, broad category…but it does give me somewhere to start with the meal planning; 2) it makes a beautiful peace treaty for the taste bud cold war Dave and I are waging…no more can he tell me that I never eat Asian food with him!; 3) it has an awesome name—always a bonus; and 4) it’s so easy to make large amounts of stir-fry, so easy to accommodate different dietary needs, that Stir Friday is the perfect way to kick off one of our major family goals: becoming better hosts.

So, friends who live in the greater DC area, consider this your open invitation.

Confetti Greek Yogurt Pancakes

We like pancakes.

We like them so much that we have started eating them every week. It’s a delicious ritual.

Pancakes are pretty phenomenal, aren’t they? Do you know what makes pancakes more phenomenal (if you are 3 years old)?

Sprinkles!

And…sshh…do you know what makes them more phenomenal if you are 30 years old? Using Greek yogurt for a little protein, and raw honey instead of refined sugar. Because a sugar crash isn’t pretty, no matter how old you are.

I absolutely love these pancakes! I feel like the sprinkles are smiling at me. In fact, this may be the first time in my memory that sprinkles have actually improved a food for me! I might have to make sprinkles a habit.
